The Today screen computes the daf from the date you are reading this, not a snapshot. Since cycle 8 opened on 24 June 1975 the cycle has been a fixed 2,711 days, so the daf is arithmetic on the Julian day number — the Hebrew calendar never enters into it.
The daf text bundled into this demo is Chullin 111, today's daf. The real app fetches any of the 2,711 and keeps what you open.
Checked, not assumed
Kinnim, Tamid and Middos continue their volume's pagination instead of starting at daf 2. Kinnim and Middos have no Gemara at all. Shekalim is learned from the Yerushalmi, whose daf numbering runs out at 21b even though the cycle has a daf 22 — that last day opens on the closing halachah instead. Open Seder Kodashim in the Shas tab and the numbering picks up mid-volume, as it does in print.
On the daf, tap צורת הדף to open the photographed page — the Romm Vilna pressing of 1880, Gemara in the middle, Rashi on the inside margin, Tosafos on the outside. Tap it again to enlarge, and once more for reading size. Coverage is uneven, so the app asks Sefaria which pressing exists for each amud rather than guessing at a filename; where Vilna is missing it falls back to Bomberg's 1523 Venice edition, which set that layout in the first place.
The scan travels inside this page, because a published artifact may not call out to another host. In the app it is fetched per daf and kept for offline reading.
The Schottenstein text is copyrighted and is not here. This uses the William Davidson Talmud with the Steinsaltz elucidation, which follows the same convention: bold is the literal words of the Gemara, plain text the explanation woven in around them.
